Baked Creamy Garlic Chicken w/ Artichokes

  • 3 oz garlic and herb cream cheese softened
  • 2 boneless chicken breasts
  • 1/6 tsp garlic powder
  • salt and pepper to taste
  • 6 oz baby carrots
  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • 1/2 tbsp rosemary



  • Drain and chop artichoke hearts and add to a large bowl along with cream cheese. Mix until combined.
  • Add chicken to container with lid.
  • Season chicken with next 2 ingredients. Spread cream cheese mixture on top of chicken. Use wax paper between layers if needed.
  • Halve baby carrots and place in a large zipper bag along with remaining ingredients. Zip to seal and shake to mix.


  • Place chicken on a large baking sheet covered with foil or parchment paper. Place carrots around chicken.
  • Bake in a 400 degree oven for 30-40 minutes until chicken is done and carrots are tender.
  • Cook chicken to internal temp of 160 degrees F.
